So I thought that the first recipe featured should be an old classic, something simple and easy for anyone to make but the truth is that we are completely inundated with tomatoes and desperate for any excuse to use them. Our poor friends and family must now be so tired of being despatched with bucket loads, they are delicious though! Perhaps we should consider our own La Tomatina Noordhoek!

BASIC TOMATO SAUCE
1/2 Small onion finely chopped
1 Small carrot finely chopped
1/2 celery stalk
1 Clove Garlic
4 Tbsp olive oil
1 kg Tomatoes
Small handful of parsley and basil
Salt + Pepper

Cook the onion, carrot, celery and garlic in the olive oil in a pan until the onion is transparent. Trasfer to baking tray and add the tomatoes and herb, season with salt + pepper bake @ 180 degrees for 20 / 30 minutes. Sieve to remove pips and skin.
Add to pasta and serve. Serves 4.
